CHOC CHIP COOKIES🍪

I am a lover of all things chocolate, especially CHOC CHIP COOKIES.

After a lot endless searching and trails and error, I finally perfected my perfect choc chip recipe and obviously, it would be selfish to keep it all to myself.


INGREDIENTS:

1 cup Muscovado sugar or the darkest brown sugar you can find (see note below)

1/2 cup white sugar

3/4 cup sunflower seed oil

2 large eggs

2 tsp milk

1 tsp vanilla extract

1 1/2 cups bread flour (see note below)

1 1/2 cups self raising flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 cup salted butter

4 packets dark chocolate chunks - Woolworths quality is excellent

1 slab lindt singles dark - for extra indulgence 🤤


METHOD:


1. In a bowl, sift bread flour, self raising flour, baking soda, salt and then set aside.

. In another bowl, combine your sugars, oil, eggs, milk and vanilla extract.

3. Melt butter in a saucepan and brown on low to medium heat.

4. Pour the browned butter into a bowl and allow to cool.

5. Once cooled, add the muscovado sugar and combine well.

6. Add it to your flour mix and stir only until flour disappears.

7. Add in chocolate chunks.

8. Wrap tightly in cling film and refrigerate for atleast an hour.

9. Preheat oven to 190 deg cel.

10. When firm, put a tsp of dough into your palm and place a piece of lindt single on top - cover with another tsp of dough and then roll into a round ball.

11. Place the balls on a baking sheet - spray with spray and cook - place in freezer for atleast 30 - 45mins.

12. Remove from freeze and place immediately from oven.

13. Bake for 10 – 12 minutes



NOTES:

1. Use bread flour instead of cake flour – the main difference is in the gluten content, which helps the yeast stretch to rise. I use bread flour as it prevents the cookie dough from spreading whilst baking.

2. Muscovado sugar are one of those ingredients used for special occasions, its hardly a fancy ingredient but its extraordinary flavour can add magic to your baking especially choc chip cookies. It less refined and has a rich flavour. This can be found at the food market in Woolworths, an alternative is dark brown sugar which can be found in common supermarkets.



3. Woolies dark chocolate chunks is the best quality chunks that I have come across. Normal baking chocolate chips carry a high fat content and is often displeasing to the palette and is capable of resulting in disastrous cookies.

4. I did try leaving out the freezing but the cookies spread too much.
